Here is what is aging…
Although the challenges of 2020-2021 changed the original vector of this journey, it did not dampen our drive. Currently, we have over 330 barrels of whisky aging. For this initial Bourbon, we created a mash bill (recipe) utilizing six different specialty grains. We had a goal in mind, and it wasn’t simply to create something “unique” – it was to create a beautifully smooth sipping Bourbon.
We’re hoping this Bourbon is something to share with those friends who are family and the family who are friends, or to share with yourself… simply because.
We spent years researching and formulating our mash bill and finding just the right grains, some of which were Virginia-grown and sourced locally, and others from further away. We spent similar efforts researching barrel and aging variables. We have specifically designed and sourced barrels with 6 custom char and toast profiles from two different cooperages. We have taken these extra steps to steer this product to a smooth sipping whisky with toasty, toffee, vanilla, dried fruit nuances and depth with an amazing mouth feel. Some of these choices were not the easiest or quickest, but they were the right choices for the whisky experience we want to create.
With all of that (and a few prayers too), we couldn’t be more excited about what ultimately came off the still and how it is progressing in the barrels. As happy as we are with what we tasted already, we vow not to rush it into bottles before it is ready.
So for now, it is simply a waiting game until the whisky tells us it is time.
The variety of our barrels means the barrels will mature differently and at different rates, potentially.
UPDATE!!!! We have pulled the 4-year samples, and they have said, “Okay, we are ready to go public” - so we are working on some design approvals and some logistics and behind-the-scenes not-interesting things, and we are shooting to be on some shelves somewhere in 2026. I won’t commit to when, but I am hoping by maybe late summer 2026 if things fall into place.
